The sake was brewed by former master Toji, Hajime Yamaguchi, who was one of the highest regarded master brewers of all Japan. Hajime-San passed away in 2010, leaving his legacy behind in this truly unique sake. Very juicy and extremely silky in texture, it has an amazing sweet, fruity aroma like fresh Japanese peach or apple.       <image:caption>Kuramoto, 5th Generation Owner of Nanbu Bijin Kosuke Kuji was born in 1972, the eldest son of Hiroshi Kuji, the 4th generation owner of Nanbu Bijin Brewery.  Kosuke Kuji studied the art of making sake and shochu at the prestigious Tokyo University of Agriculture, learning from professor Takeo Koizumi, who is a well regarded authority on fermented foods. Nanbu Bijin sake has received many awards in national and international sake competitions and also were the first to create a certified Kosher and "no sugar added" plum sake made with only koji rice and locally sourced green plums from Iwate. Kosuke Kuji is well regarded in the sake industry as a strong community supporter of the Tokhoku region of Japan and as an energetic, enthusiastic speaker about all things sake. Nanbu 南部 literary means "southern", but the actual meaning stems from the traditional  name of the region. Bijin 美人 means "beautiful woman" and is derived from the brewery's mission to produce clean, beautiful sake.
